Onion Smothered Pork Tenderloin

2 (3/4 pound) Pork Tenderloins
Cooking Spray
2 teaspoons stick butter
2 cups sliced onions
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon pepper
1. Preheat oven to 400 degrees
2. Trim fat from pork; cut a lengthwise slit down center of each tenderloin, cutting about 2/3 of the way through the meat.
Place on a broiler pan coated with cooking spray. Insert meat thermometer into thickest portion of the pork.
3. Melt butter in a large, nonstick skillet. Add onion, and saute 5 to 6 minutes or until tender. Add thyme, salt and pepper. Spread onion evenly into cut tenderloins.
Bake at 400 for 45 minutes or until meat thermometer registers 160 degrees (slightly pink)
Yield: 6 servings
